Salsa and Guacamole!

Just thought I’d share a delicious recipe for guacamole. It’s my favorite.

2 hass avocados

½ a small onion, finely diced

½ a medium tomato, finely diced

¼th of a jalapeno, finely diced (or more, depending on your spice preference)

1-2 cloves garlic, finely minced

The juice of ½ a lime

2-3 tbsp cilantro

Salt to taste

Slice the avocados, twist to separate the halves, and remove the pit. Do that part carefully. I use a fork to mash the avocado flesh still inside the skin, then I spoon it into a bowl. Next, add the onion, garlic, jalapeno, cilantro, lime juice, salt. Stir to combine. Add the tomatoes last to preserve their texture, otherwise they might get all mashed up in the mix. Enjoy your delicious guacamole with some tortilla chips, on a sandwich, some fajitas, burritos, tacos, as veggie dip, or anything else you can think of.

My favorite salsa recipe:

2 cans diced tomatoes (yes, cans. Or home-jarred garden fresh tomatoes. Whichever you have)

1 medium onion, diced

1/3 cup equal amounts cilantro and parsley

¼ – ½ a jalapeno, seeded and deveined (or leave that stuff in if you like it really spicy)

2 cloves garlic, diced

½ the juice of 1 lime


Drain the liquid from the diced tomatoes and dump into a food processor. Add the cilantro and parsley, and pulse several times. Add the jalapeno, garlic, lime juice and salt, and pulse several times. Add the onion last and pulse once or twice to combine. This recipe is excellent for home canning, you can add some grilled corn and black beans to it, enjoy over eggs, omelets, in tacos, burritos, chicken, pretty much whatever you want.
